Vegan Mexican Pizza
First, preheat your oven to 400 degrees F. Then, dice your potatoes and boil them in water or veggie stock until they’re soft enough to stick with a fork. Next, mix your potatoes, some corn, and any other veggies you want with a tablespoon of olive oil and a 3 teaspoons of Ortega taco seasoning.
Now, spread a thick layer of vegetarian refried beans on a tortilla. Then, pour your potatoes and corn on top, and add a little salsa on top of that. Finally, put another tortilla on top and a heavy dish on top of that to press everything together. Put it all in the oven for 20 minutes. Take it out and cut it up and you’ve got a little Mexican pizza!
